Dessert  Recipes - Chinese Ice Cream Recipe

Ingredients

  • 8 scoops of any vanilla ice cream (not soft-scoop)

  • Oil, for deep-frying

  • 90 ml/6 tbsp plain (all-purpose) flour

  • 2 eggs, beaten

  • 50 g/2 oz/1 cup fresh white breadcrumbs

  • 15 ml/1 tbsp desiccated (shredded) coconut

  • All-year Raspberry Sauce, to serve


Method:

  1. Line a baking (cookie) sheet with greaseproof (waxed) paper. Put the scoops of ice cream on it and return to the freezer immediately until very hard (preferably overnight).

  2. Heat the oil until a cube of day-old bread browns in 30 seconds.

  3. Coat each scoop of ice cream in flour, then beaten egg, then the breadcrumbs mixed with the coconut.

  4. Deep-fry for no more than 30 seconds, until golden. Serve immediately with All-year Raspberry Sauce.
