Dessert Recipes - Chinese Ice Cream Recipe
Ingredients

scoops of any vanilla ice cream (not soft-scoop)

Oil,
for deep-frying

ml/6 tbsp plain (all-purpose) flour

2 eggs, beaten

g/2 oz/1 cup fresh white breadcrumbs

ml/1 tbsp desiccated (shredded) coconut

All-year Raspberry Sauce, to serve
Method:

Line a baking (cookie) sheet with greaseproof
(waxed) paper. Put the scoops of ice cream on it and
return to the freezer immediately until very hard
(preferably overnight).

Heat the oil until a cube of
day-old bread browns in 30 seconds.

Coat each scoop
of ice cream in flour, then beaten egg, then the
breadcrumbs mixed with the coconut.

Deep-fry for no
more than 30 seconds, until golden. Serve
immediately with All-year Raspberry Sauce.
