Desserts Recipes - Chocolate Baked Alaska Recipe
Ingredients
1 small chocolate flavored Swiss (jelly) roll
3 egg whites
175 g/6 oz/3/4 cup caster (superfine) sugar
2.5 ml/1/2 tsp vanilla essence (extract)
8 scoops of Dark Chocolate Ice Cream
6 whole toasted almonds
Method:
Slice the Swiss roll and lay in a single layer on an ovenproof plate. Whisk the egg whites until stiff.
Whisk in half the sugar and the vanilla essence and continue whisking until stiff and glossy. Fold in the remaining sugar.
Pile up the ice cream on the Swiss roll. Cover completely with the meringue mixture.
Decorate with the almonds and bake in a preheated oven at 230°C/450°F/gas mark 8 for 2 minutes until turning pale golden. Serve immediately.
