Dessert  Recipes - Chocolate Ice Cream Flan Recipe

Ingredients

  • 50 g/2 oz/1/4 cup butter or margarine

  • 15 ml/1 tbsp golden (light corn) syrup

  • 15 ml/1 tbsp caster (superfine) sugar

  • 2.5 ml/1/2 tsp vanilla essence (extract)

  • 200 g/7 oz/1 small packet of chocolate digestive biscuits (graham crackers),      crushed

  • 50 g/2 oz/1/4 cup raisins

  • Oil, for greasing

  • 8 large scoops of Dark Chocolate Ice Cream

  • 150 ml/2/3 cups double (heavy) cream, whipped

  • 50 g/2 oz/1/2 cup plain (semi-sweet) chocolate, melted


Method:

  1. Melt the butter or margarine, syrup, sugar and vanilla in a saucepan. Stir in the crushed biscuits and raisins.

  2. Press into the base and sides of an oiled 20 cm/8 in flan ring set on a flat serving plate. Chill until firm.

  3. Remove the flan ring. Pile scoops of ice cream in the flan case (pie shell).

  4. Decorate with whipped cream and drizzle the melted chocolate over. Serve straight away.
