Ingredients

g/4 oz/2/3 cup dried
mixed fruit (fruit cake mix)

g/2 oz/1/2 cup glace
(candied) cherries, chopped

tbsp brandy

ml/1/2 tsp mixed
(apple-pie) spice

ml/17 fl oz/2 1/4 cups any vanilla
ice cream, slightly softened

ml/6 tbsp double
(heavy) cream, lightly
whipped

g/2 oz/1/2 cup toasted,
chopped
mixed nuts

A holly sprig, to
decorate
Method:
-
Put the dried fruit and cherries in a bowl and mix
in the brandy and spice. Cover with Clingfilm
(plastic wrap) and leave to soak for 3 hours or
overnight.

Mash the ice cream briefly and fold in
the cream, soaked fruit and nuts. Turn into a 1
liter/4 1/4 cup pudding basin. Cover and
freeze until firm.

When ready to serve, loosen the
edge. stand the basin briefly in hot water, then
turn out, decorate with a holly sprig and serve.
