Dessert  Recipes - Economy Vanilla Ice Cream Recipe

Ingredients

  • 600 ml/2 1/2 cups milk

  • 30 ml/2 tbsp custard powder

  • 100 g/4 oz/1/2 cup caster (superfine) sugar

  • 5 ml/1 tsp vanilla essence (extract)

  • 1 sachet of Dream Topping mix


Method:

  1. Set aside 150 ml/2/3 cup of the milk to make up the Dream Topping. Blend the custard powder with a little of the remaining milk and the sugar in a saucepan.

  2. Add the remaining milk, bring to the boil and cook for 2 minutes, stirring all the time, until thick and smooth.

  3. Stir in the vanilla essence. Cover with a circle of wetted greaseproof (waxed) paper to prevent a skin forming and leave until cold.

  4. Make up the Dream Topping with the reserved milk as directed on the packet. Fold into the custard.

  5. Turn into a freezer proof container and freeze for 1 1/2 hours. Whisk with a fork to break up the ice crystals, then freeze until firm.
