Dessert  Recipes - Fresh Raspberry Ice Cream Recipe

Ingredients

• 450 ml/2 cups single (light) cream

• 2 egg yolks

• 100 g/4 oz/1/2 cup caster (superfine) sugar

• 5 ml/1 tsp vanilla essence (extract)

• 300 ml/1 1/4 cups double (heavy) cream

• 225g/8oz raspberries, pureed

Method:

1. Prepare as for any of the vanilla ice creams, but blend in the  raspberries, pureed then passed through a sieve (strainer) to remove the seeds, before whisking in the whipped cream or Dream Topping.
