Dessert  Recipes - Iced Christmas Pud Recipe

Ingredients

  • 4 eggs, separated

  • 100 g/4 oz/1/2 cup caster (superfine) sugar

  • 225 g/8 oz bought Christmas Pudding or rich fruit cake, broken into small pieces

  • 300 ml/1 1/4 cups double (heavy) cream, whipped

  • 45 ml/3 tbsp brandy or rum

  • A small holly sprig, to decorate


Method:

  1. Whisk together the egg yolks and sugar until thick and pale. Fold in the crumbled pudding, then the cream and the brandy or rum.

  2. Whisk the egg whites until stiff and fold in with a metal spoon. Turn into a 1.5 liter/6 cup pudding basin (or two small basins), cover and freeze until firm.

  3. When ready to serve, loosen the edge with a round-bladed knife.

  4. Dip the basin briefly in hot water, turn out on to a serving plate and decorate with a small holly sprig. Serve straight away.
