Ingredients
Method:

Put the sugar and water in a saucepan and heat
gently, stirring, until the sugar has dissolved.

Bring to the boil and boil without stirring for 5
minutes. Leave to cool.

Make the lemon rind and juice up to 250 ml/1 cup with
bottled lemon juice. Stir into the syrup.

Turn into a
freezer proof container and freeze until half-frozen.
Whisk with a fork to break up the ice crystals.
Freeze again until firm.

Turn out of the container
and crush coarsely. Serve immediately in rough
chunks.
