Desserts Recipes - Lemon Water Ice Recipe
Ingredients
3 lemons
300 ml/1 1/4 cups water
5 ml/1 tsp powdered gelatin
100 g/4 oz/2/3 cup icing (confectioners') sugar
1 egg white
Method:
Thinly pare the rind from the lemons and simmer in the water for 5 minutes. Remove the rind.
Sprinkle the gelatin over the water and stir until completely dissolved. Stir in the sugar until dissolved.
Squeeze the juice from the lemons and stir in. Turn into a freezer proof container and freeze until half-frozen.
Whisk with a fork to break up the ice crystals. Whisk the egg white until stiff and fold into the mixture with a metal spoon. Freeze until firm.
