Ingredients

450 ml/2 cups
single (light) cream

2 egg yolks
-
100 g/4 oz/1/2 cup
caster (superfine) sugar

5 ml/1 tsp vanilla essence
(extract)

300 ml/1 1/4 cups double (heavy) cream

a small ripe melon, finely
chopped
Method:

Prepare as for any of the vanilla ice creams, but fold in
the finely
chopped flesh of 1 small
ripe melon
after the final
whisking, then
freeze until
firm.
