Dessert  Recipes - Passion Fruit Ice Cream Recipe

Ingredients

• 450 ml/2 cups single (light) cream

• 2 egg yolks

• 100 g/4 oz/1/2 cup caster (superfine) sugar

• 5 ml/1 tsp vanilla essence (extract)

• 300 ml/1 1/4 cups double (heavy) cream

• 3 passion fruit

Method:

1. Prepare as for any of the vanilla ice creams, but scoop out the flesh and seeds of 3 passion fruit and pass through a sieve (strainer).

2. Whisk in the juice at the final whisking, then freeze until firm.
