Dessert Recipes - Raspberry Knickerbockers Glory Recipe
Ingredients

1 packet of raspberry-flavored
jelly (jello)
-
4 trifle
sponges
-
30 ml/2 tbsp sweet sherry or orange juice
-
225 g/8 oz raspberries
-
15 ml/1 tbsp caster
(superfine) sugar

4 scoops of Raspberry Ripple Ice Cream
-
150 ml/2/3 cup
double (heavy) cream, whipped

Chopped nuts and
colored sprinkles, to decorate
Method:

Make up the jelly according to the packet
directions. Chill until set.

Crumble the trifle
sponges in a bowl and mix in the sherry or orange
juice. When soaked, divide between four tall sundae
glasses.

Divide the raspberries between the glasses.
Sprinkle with the sugar. Chop up the jelly and spoon
over the raspberries.

Top each with a scoop of ice
cream. Smother in whipped cream and decorate with
chopped nuts and colored sprinkles.
