Block Recipe
Ingredients

Oil,
for greasing

g/1 oz/2 tbsp light brown sugar

75 g/3 oz/1/3 cup butter

g/4 oz/2 cups bran flakes, lightly
crushed

ml/2 tsp ground cinnamon

Finely grated rind and juice of 2
lemons

10 ml/2 tsp powdered gelatin

large eggs, separated

g/1 oz/2 tbsp caster (superfine) sugar

200 g/7 oz/1
small can of sweetened
condensed milk
Method:

Lightly oil a 900 g/2 lb loaf tin (pan). Put the
brown sugar and butter in a saucepan and heat gently
until the butter has melted. Stir in the cereal and
cinnamon.

Press almost half of the mixture into the
base of the prepared tin. Put the lemon rind and
juice in a small bowl. Sprinkle the gelatin over
and leave to soften for 5 minutes.

Stand the bowl in
a pan of hot water and stir until the gelatin has
dissolved completely.

Whisk the egg yolks with the
caster sugar until thick and pale. Whisk in the
condensed milk, then the gelatin mixture.

Whisk the
egg whites until stiff and fold in with a metal
spoon. Turn into the prepared tin, cover with the
remaining cereal mixture in an even layer and press
very lightly.

Wrap in Clingfilm (plastic wrap) or
foil and freeze until firm. Turn out and serve
sliced.
