Pineapple Fingers Recipe
Ingredients

397 g/1 large can of crushed
pineapple
-
50
g/2 oz/1/4 cup caster (superfine) sugar
-
45 ml/3 tbsp
golden (light corn) syrup
-
Finely grated rind and juice of 1
lime
-
450 ml/2 cups coconut milk
-
2 egg
whites
-
Toasted shredded coconut, to decorate
Method:

Mix together all the ingredients except the egg
whites and turn into one or two fairly shallow
freezer proof containers.

Freeze for about 1 1/2 hours until half-frozen. Turn into a bowl and whisk
thoroughly to break up the ice crystals.

Whisk the
egg whites until stiff. then fold into the slushy
mixture with a metal spoon. Return to the freezer
containers and freeze until firm.

Cut into fingers
and serve decorated with toasted shredded coconut.
