Dessert Recipes - Apricot Nut Crunch Recipe

Ingredients

  • 410 g/1 large can of apricots,

  • drained, reserving the juice

  • 1 packet of orange flavored jelly

  • 25 g/1 oz/2 tbsp butter

  • 15 ml/1 tbsp golden (light corn) syrup

  • 15 ml/1 tbsp chopped nuts

  • 50 g/2 oz/1 cup bran flakes, lightly crushed

  • 170 g/6 oz/1 small can of cream


Method:

  1. Puree the apricots in a blender or food processor. Make the juice up to 450 ml/2 cups with water.

  2. Dissolve the jelly in a little of this liquid in a saucepan over a gentle heat or in the microwave. Stir in the remaining liquid.

  3. Blend in the fruit puree and turn into one large or four individual serving dishes. Chill until set.

  4. Melt the butter in a saucepan with the syrup. Stir in the nuts and bran flakes. Spread the cream over the set fruit mixture.

  5. Spoon the bran flake mixture over and chill again until ready to serve.
