Dessert Recipes - Blackberry and Apple Meringue Flan Recipe

Ingredients

  • 20 cm/8 in sponge flan case

  • 2 eggs, separated

  • 410 g/1 large can of blackberry and apple pie filling

  • 100 g/4 oz1/4 cup caster (superfine) sugar


Method:

  1. Put the flan case (pie shell) on an ovenproof serving plate. Whisk the egg yolks into the pie filling and turn into the flan case.

  2. Whisk the egg whites until stiff. Whisk in half the sugar and fold in the remainder.

  3. Pile on top of the flan and bake in a preheated oven at 190°C/375°F/gas mark 5 for about 10-15 minutes until just turning color. Serve warm.
