Dessert Recipes - Meringue Peaches Recipe

Ingredients

  • 4 canned peach halves, drained

  • Oil, for greasing

  • 1 trifle sponge

  • 30 ml/2 tbsp orange or peach liqueur

  • 1 egg white

  • 50 g/2 oz/1/4 cup caster (superfine) sugar

  • 25 g/1 oz/1/4 cup flaked (slivered) almonds

  • Icing sugar, for dusting


Method:

  1. Put a very thin slice off the rounded side of each peach half so they will stand firm. Place on a lightly oiled baking (cookie) sheet.

  2. Finely chop the slices and place in the cavities of the peaches. Cut the trifle sponge into quarters and place a quarter in each cavity. Spoon the liqueur over.

  3. Whisk the egg white until stiff. Gradually whisk in the sugar and continue whisking until stiff and glossy.

  4. Pile the meringue mixture over the peaches and decorate with the almonds.

  5. Bake in a preheated oven at 220°C/425°F/gas mark 7 for about 5 minutes until turning lightly golden. Dust with icing sugar and serve at once.
