Dessert Recipes - Peach Melba Nests Recipe
Ingredients

300 g/11 oz/1
medium can of raspberries
-
6 bought meringue
nests
-
200
g/7 oz/scant
1 cup
low fat soft cheese
-

g/1 large
can of peach
halves, drained
Method:
-
Drain the raspberries, reserving the juice. Pass the
fruit through a sieve (strainer) into a bowl.

Thin
to a pouring consistency with a little of the juice.
Put the meringue nests on six serving plates.

Spoon
the cheese into the nests and spread out gently. Top
each with a peach half, rounded-side up.
-
Spoon the
raspberry sauce over each so it runs down the sides
and on to the plates. Serve straight away.
