Dessert Recipes - Rhubarb Cremolo Recipe

Ingredients

  • 550 g/1 1/4 lb/1 very large can of rhubarb, drained, reserving the syrup

  • 1 packet of strawberry flavored jelly

  • 170 g/6 oz/1 small can of evaporated milk

  • Whipped or aerosol cream and chopped pistachios, to decorate


Method:

  1. Put the rhubarb syrup in a saucepan. Break up the jelly and add to the pan.

  2. Heat gently, stirring, until dissolved. (Or place the syrup and jelly in a bowl and microwave briefly, then stir to dissolve.)

  3. Pass the rhubarb through a sieve (strainer) or puree in a blender or food processor.

  4. Blend the jelly with the evaporated milk, then stir in the rhubarb. Turn into six sundae dishes and chill until set.

  5. Decorate with whipped cream and chopped pistachios before serving.
