Dessert Recipes - Rhubarb and Custard Charlotte Recipe

Ingredients

  • 25 g/1 oz/2 tbsp butter

  • 4 slices of buttered bread

  • 1 individual carton of custard

  • 550 g/1 very large can of rhubarb, drained, reserving the juice

  • 30 ml/2 tbsp light brown sugar


Method:

  1. Use a little of the butter to grease a 1.2 liter/5 cup ovenproof dish. Line the dish with some of the bread.

  2. Spread the custard over the bread, then top with the rhubarb. Dice the remaining bread and scatter over. Sprinkle with the sugar.

  3. Bake in a preheated oven at 200°C/400°F/gas mark 6 for about 40 minutes until crisp and golden. Serve with the reserved juice.
