Dessert Recipes - Rum and Raisin Mountain Recipe

Ingredients

  • 50 g/2 oz/1/3 cup raisins

  • 30 ml/2 tbsp dark rum

  • 1 liter/4 1/4 cups soft-scoop vanilla ice cream

  • 2-3 meringues, crushed

  • Whipped or aerosol cream, to decorate


Method:

  1. Put the raisins in a bowl with the rum. Leave to soak for 1 hour.

  2. Turn the ice cream into a bowl and quickly mash in the soaked raisins and the crushed meringues. Do not over-mix or the ice cream will start to melt.

  3. Quickly turn into a 1 liter/4 1/4 cup pudding basin. Cover with Clingfilm (plastic wrap) and freeze until firm.

  4. When ready to serve, dip the basin briefly in hot water, loosen round the edge with a round-bladed knife and turn out on to a serving plate.

  5. Pile whipped cream on top and serve immediately.
