Dessert Recipes - Rum and Raisin Mountain Recipe
Ingredients

50 g/2 oz/1/3 cup raisins
-
30
ml/2 tbsp dark rum

1 liter/4 1/4 cups soft-scoop vanilla ice
cream

2-3
meringues, crushed
-
Whipped or
aerosol cream, to decorate
Method:

Put
the
raisins in a bowl with the
rum. Leave to soak for 1 hour.

Turn the ice cream
into a bowl and quickly mash in the soaked raisins and the crushed meringues. Do not over-mix or the ice
cream will start to melt.

Quickly turn into a 1
liter/4 1/4 cup pudding basin. Cover with Clingfilm (plastic wrap) and freeze until firm.

When
ready to serve, dip the basin briefly in hot water,
loosen round the edge with a round-bladed knife and
turn out on to a serving plate.

Pile whipped cream
on top and serve immediately.
