Dessert Recipes - Swiss Baked Alaska Recipe
Ingredients

1 small raspberry jam-
(conserve-) filled Swiss (jelly) roll
-
3 egg whites
-
175 g/6 oz/3/4 cup
caster (superfine) sugar
-
8 scoops of raspberry
ripple ice cream
-
3 glace (candied) cherries, halved
-
6 angelica leaves
Method:
-
Slice the Swiss roll and place in a single layer on
an ovenproof plate. Whisk the egg whites until
stiff.

Whisk in half the sugar and continue whisking
until stiff and glossy. Fold in the
remaining sugar.

Pile
the ice cream up in the centre of the Swiss
roll. Cover
completely with the meringue mixture and decorate
with the cherries and angelica leaves.

Bake
immediately in a preheated oven at
230°C/450°F/gas
mark 8 for 2 minutes until the meringue is turning
pale golden. Serve
immediately.
