Ingredients

410 g/1
large can of fruit cocktail, drained,
reserving the juice

5 ml/1 tsp bottled lime juice
(optional)

100 g/4 oz/1 cup plain (all-purpose) flour
-
2.5 ml/1/2 tsp ground
ginger
-
50 g/2 oz/1/4 cup
butter, diced
-
50 g/2 oz/1/4 cup light
brown sugar
-
50 g/2 oz/1/2 cup desiccated (shredded) coconut
-
Cream, to serve
Method:
-
Put the fruit in the base of a shallow ovenproof
dish. Sprinkle with the lime juice, if using.

Sift
the flour and ginger in a bowl. Add the butter and
rub in with the fingertips.

Stir in the sugar and
coconut. Sprinkle over the fruit and press down
lightly.

Bake in a preheated oven at
180°C/350°F/gas mark 4 for about 25 minutes
until golden brown and crisp.
-
Serve warm with the
reserved juice and cream.
