Dessert Recipes - Cherries Jubilee Recipe

Ingredients

  • 1 packet of cherry flavored jelly (jello)

  • Boiling water

  • 450 ml/2 cups American ginger ale

  • 450 g/1 lb ripe cherries, stoned (pitted)

  • 75 ml/5 tbsp double (heavy) cream, whipped

  • Crystallized (candied) ginger pieces, to decorate


Method:

  1. Break up the jelly and place in a measuring jug. Make up to 150 ml/2/3 cup with boiling water. Stir until completely dissolved.

  2. Make up to 600 ml/2 1/2 cups with the ginger ale, stirring until well blended. Leave until cold, then chill until the consistency of egg white.

  3. Put the cherries in a 1 liter/4 1/4 cup jelly (jello) mould. Pour the cherry jelly over. Chill until set.

  4. Dip the mould briefly in hot water and turn the jelly out on to a serving plate.

  5. Decorate round the base with swirls of whipped cream and top with pieces of crystallized ginger.
