Dessert Recipes - English Vanilla Blancmange Recipe

Ingredients

  • 45 ml/3 tbsp corn flour (cornstarch)

  • 40 g/3 tbsp granulated sugar

  • 600 ml/2 1/2 cups milk

  • Vanilla essence (extract), to taste

  • 15 g/1 tbsp unsalted (sweet) butter

  • Cream (optional), to serve


Method:

  1. Blend the corn flour and sugar with a little of the milk until smooth.

  2. Bring the remaining milk just to the boil and pour over the corn flour mixture, stirring.

  3. Return to the pan, bring to the boil and cook for 2 minutes, stirring all the time, until thickened and smooth.

  4. Flavor with vanilla to taste and stir in the butter. Turn into a wetted 600 ml/2 1/2 cup jelly (jello) mould and leave until cold. Chill until set.

  5. Turn out on to a serving plate and serve cold with cream, if liked.
