Ingredients

15 ml/1 tbsp powdered gelatin
-
600 ml/2 1/2 cups
pure orange juice

15 ml/1 tbsp caster (superfine) sugar

2 bananas
-
Lemon juice
-
8 strawberries, sliced
-
100 g/4 oz blueberries
-
100 g/4 oz raspberries
Method:

Sprinkle the gelatin over a little of the orange
juice and the sugar in a small bowl. Leave to soften
for 5 minutes.

Stand the bowl in a pan of hot water
and stir until the gelatin has dissolved
completely. Stir into the remaining orange juice.
Chill until on the point of setting.

Meanwhile,
slice the bananas and toss in lemon juice to prevent
browning. Pour a little of the orange mixture in the
base of a 1.2 liter/2 pt/5 cup loaf tin (pan)
or terrine.

Arrange a layer of banana slices on top.
Pour on more of the nearly set jelly (jello) and add
a layer of sliced strawberries. Repeat with the
blueberries, then the raspberries.

Continue
layering, finishing with a layer of the rest of the
jelly. Chill until set.

Dip the base of the tin
briefly in hot water, then turn out on to a serving
plate. Serve sliced.
