Dessert Recipes - Lemon Milk Jelly Recipe
Ingredients

1 lemon
-
20 ml/4 tsp
powdered gelatin
-
30 ml/2
tbsp
water

600 ml/2 1/2 cups
milk
-
50 g/2 oz/1/4 cup
caster (superfine) sugar

Yellow food
coloring (optional)

Angelica leaves,
to decorate
Method:

Finely grate the rind from the lemon. Cut off all
the white pith, then cut the fruit into slices, then
into quarters.

Sprinkle the gelatin over the lemon rind and water
in a small bowl. Leave to soften for 5 minutes.

Stand the bowl in a pan of hot water and stir until
the gelatin has dissolved completely.

Warm the milk in a saucepan. Stir in the sugar until
dissolved. Mix a little of the milk into the
gelatin, then pour back into the remaining milk and
stir well.

Color lightly with food coloring, if liked. Pour
into a wetted 750 ml/3 cup jelly (jello) mould and
leave to cool. Chill until set.

Turn the jelly out on to a serving plate, decorate
with the quartered lemon slices and angelica leaves.
