Dessert Recipes - Peach Jelly Cream Recipe

Ingredients

  • 6 ripe peaches, skinned, halved and stoned (pitted)

  • 1 packet of lemon flavored jelly (jello)

  • Boiling water

  • 300 ml/1 1/4 cups single (light) cream


Method:

  1. Puree four of the peaches in a blender or food processor. Slice the remainder and reserve for decoration. Break up the jelly and place in a measuring jug.

  2. Make up to 150 ml/2/3 cup with boiling water and stir until dissolved. Leave to cool, then stir in the peach puree and cream.

  3. Turn into a 600 ml/2 1/2 cup wetted jelly (jello) mould and chill until set.

  4. Dip the mould briefly in hot water, turn the jelly out on to a serving plate and decorate with the peach slices.
