Dessert Recipes - Strawberry Blancmange Recipe

Ingredients

  • 300 g/11 oz/1 medium can of strawberries in syrup

  • Cold milk

  • 45 ml/3 tbsp corn flour (cornstarch)

  • Caster (superfine) sugar, to taste

  • Pink food coloring (optional)

  • 15 g/1 tbsp unsalted (sweet) butter

  • Smooth Strawberry Sauce (optional), to serve


Method:

  1. Puree the can of strawberries and make up to 600 ml/2 1/2 cups with milk.

  2. Blend the corn flour with a little of the mixture in a saucepan, then stir in the remainder.

  3. Bring to the boil and cook for 2 minutes, stirring all the time, until thickened and smooth.

  4. Sweeten to taste, add a few drops of pink food coloring, if liked, and stir in the butter.

  5. Turn into a wetted 600 ml/2 1/2 cup wetted jelly (jello) mould. Leave until cold, then chill until set.

  6. Turn out on to a serving plate and serve with Smooth Strawberry Sauce, if liked.
