Ingredients

1 lime
-
2 small ripe avocados
-
60 ml/4 tbsp caster
(superfine) sugar

2 large egg whites
-
250 ml/8 fl oz/1 cup
whipping cream, lightly whipped

Shortbread Triangles, to serve
Method:

Thinly pare the rind off the lime and cut into thin
strips. Boil in water for 2 minutes. Drain, rinse
with cold water and drain again.

Squeeze the lime
juice. Peel the avocados, remove the stones (pits),
then mash the flesh with the lime juice. Sweeten to
taste with some or all of the sugar.

Whisk the egg
whites until stiff, then whip the cream until softly
peaking. Reserve about a quarter of the cream and
fold the remainder into the avocado mixture.

Lightly
fold in the egg whites. Spoon into six glass serving
dishes and top each with a spoonful of the remaining
whipped cream.

Chill for up to 1 hour. Decorate with
the shredded lime rind and serve with Shortbread .
