Dessert Recipes - Boozy Chocolate Mousse Recipe

Ingredients

  • 200 g/7 oz/1 3/4 cups plain (semi-sweet) chocolate

  • 3 eggs, separated

  • 15-30 ml/1-2 tbsp brandy

  • 150 ml/2/3 cup double (heavy) cream

  • Coarsely grated chocolate, to decorate


Method:

  1. Melt the chocolate over a pan of hot water (or in the microwave). Beat in the egg yolks and brandy.

  2. Whisk the egg whites until stiff, then the cream in a separate bowl until peaking.

  3. Fold the cream, then egg whites into the chocolate mixture. Turn into a glass serving dish and chill until firm.

  4. Sprinkle with coarsely grated chocolate before serving.
