Mousse Recipe
Ingredients

200 g/7 oz/1 3/4
cups plain (semi-sweet)
chocolate
-
3
eggs,
separated
-
15-30
ml/1-2 tbsp
brandy
-
150
ml/2/3 cup double (heavy) cream
-
Coarsely grated
chocolate, to decorate
Method:

Melt the chocolate over a pan of hot water (or in
the microwave). Beat in the egg yolks and brandy.

Whisk the egg whites until stiff, then the cream in
a separate bowl until peaking.

Fold the cream, then egg whites into the chocolate
mixture. Turn into a
glass serving dish and chill until firm.

Sprinkle
with coarsely grated chocolate before serving.
