Ingredients

150 g/5 oz/1 1/4 cups plain (semi-sweet)
chocolate

Grated rind and juice of
1 small orange
-
2 eggs, separated
-
15 ml/1 tbsp caster (superfine) sugar

Whipped cream, to
decorate
Method:
-
Break up the chocolate and melt in a bowl over a pan
of hot water (or melt in the microwave). Stir in the
orange rind and juice.

Place the egg yolks and sugar
in one bowl and the egg whites in another. Whisk the
egg whites until stiff, then the egg yolks and sugar
until thick and pale.

Stir the chocolate mixture
into the egg yolk mixture. Fold in the egg whites
with a metal spoon.

Turn into four individual pots
and chill until set. Decorate with whipped cream
before serving.
