Dessert Recipes - Chocolate Snow Cake Recipe
Ingredients

Oil,
for greasing

g/6 oz/1 1/2
cups plain (semi-sweet)
chocolate

eggs, separated

2 egg
whites
-
175 g/6 oz/3/4 cup caster (superfine) sugar

ml/3 tbsp warm water

ml/1 1/4 cups crème fraiche

A
little grated chocolate, to decorate
Method:

Oil two 20 cm/8 in sandwich tins (pans) and
line the bases with oiled greaseproof (waxed) paper.
Break up
the chocolate and melt in
a
bowl over a
pan of hot water or in the microwave.

Put the egg
yolks and caster sugar in a bowl over a pan of hot
water and whisk until thick and pale. Stir the warm
water into the melted chocolate, then beat into the
sugar mixture.

Whisk the egg whites until stiff and
fold in with a metal spoon. Turn into the prepared
tins and level the surfaces.

Bake in a preheated
oven at 180°C/350°F/gas mark 4 for about 15
minutes. The cakes may sink slightly in the centre,
but don't worry!

Remove from the oven and cover the
tins with greaseproof paper and a damp tea towel
(dish cloth). Leave until cold. Turn out of the tins
and remove the paper.

Sandwich the cakes together
with a little of the crème fraiche and pile the
remainder on top. Decorate with a little grated
chocolate and chill until ready to serve.
