Dessert Recipes - Chocolate Strawberry Cups Recipe

Ingredients

  • 150 g/5 oz/1 1/4 cups plain (semi-sweet) chocolate

  • 8 rose leaves

  • 2 trifle sponges, crumbled

  • 30 ml/2 tbsp kirsch

  • 120 ml/4fl oz/1/2 cup double (heavy) cream

  • 30 ml/2 tbsp strawberry jam (conserve)

  • 5 ml/1 tsp lemon juice

  • 4 small strawberries (optional)


Method:

  1. Break up the chocolate and place in a bowl over a pan of hot water. Stir until melted.

  2. Dip the rose leaves on one side only in the chocolate and leave to dry, chocolate-side up, on a sheet of greaseproof (waxed) paper.

  3. Brush the remaining chocolate liberally over the insides of four paper cake cases (cupcake papers) until thickly coated. Chill until set.

  4. When firm, gently peel away the paper to leave chocolate cases. Mix the crumbled sponges with the kirsch and spoon into the cases.

  5. Whip the cream until peaking, then whisk in the jam and lemon juice. Spoon into the cases and chill until set.

  6. Gently peel away the rose leaves from the chocolate and use the chocolate leaves to decorate the cups with a fresh strawberry on each, if liked.
