Ingredients

150 ml/2/3 cup double (heavy) cream

Finely
grated rind and juice of 1/2
lemon

50 g/2 oz/1/4
cup caster (superfine) sugar

ml/4fl
oz/1/2 cup medium-sweet cider

Shortbread
Triangles,
to serve
Method:
-
Whip the
cream with the lemon rind and juice and the sugar.
Stir in the cider.
-
Spoon into four glasses and chill
for at least 2 hours. serve with shortbread
triangles.
