Ingredients

eggs, separated

g/4 oz/1/2 cup light brown sugar

30 ml/2 tbsp instant
coffee powder or
granules

150 ml/2/3 cup hot water
-
15
ml/1 tbsp powdered gelatin
-

ml/1 1/4
cups double (heavy) cream

Walnut halves, to decorate
Method:

Tie a collar of double thickness greaseproof (waxed)
paper round an 15 cm/6 in soufflé dish so it comes
about 5 cm/2 in above the rim.

Put the egg yolks and
sugar in a bowl and whisk until thick and pale.
Dissolve the coffee in the water.

Sprinkle the gelatin over and stand the bowl in a pan of hot
water. Stir until the gelatin has dissolved (or
melt in the microwave).

Whisk into the yolks and
sugar. Leave to cool, then chill until on the point
of setting. Whisk the egg whites until stiff, then
whip the cream until softly peaking.

Fold half the
cream into the coffee mixture, then fold in the egg
whites. Turn into the prepared dish and chill until
set.

Carefully remove the collar. Decorate the top
with the remaining cream and a few walnut halves.
