Ingredients

g/1 lb fresh
cranberries

ml/4 tbsp water

Granulated sugar, to
taste

2 egg whites

g/4 oz/1/2 cup caster (superfine) sugar

2.5
ml/1/2
tsp vanilla
essence (extract)

Single (light) cream, to serve
Method:

Put the cranberries in a pan with the water. Heat
gently until the fruit begins to pop. Stir in
granulated sugar to taste. Turn into an ovenproof
serving dish.

Whisk the egg whites until stiff.
Whisk in half the caster sugar and the vanilla
essence.

Fold in the remaining caster sugar and pile
on top of the cranberries.

Bake in a preheated oven
at 140°C/275°F/gas mark 1 for 1 hour until
crisp and pale. Serve warm with single cream.
