Dessert Recipes - Flummery Recipe
Ingredients

15 ml/1 tbsp powdered gelatin
-
45 ml/3 tbsp water
-
3 eggs, separated

100 g/4 oz/1/2 cup
caster (superfine) sugar

150 ml/2/3 cup
soured (dairy sour) cream

1 large lemon
Mint sprigs, to decorate
Method:

Sprinkle the gelatin over the water in a small bowl
and leave to soften for 5 minutes.

Stand the bowl in
a pan of hot water and stir until the gelatin has
dissolved completely.

Whisk together the egg yolks
and sugar until thick and pale. Whisk in the
dissolved gelatin. Stir in the soured cream. Cut
four slices from the lemon and reserve for
decoration.

Finely grate the rind and squeeze the
juice from the remainder. Stir into the cream
mixture. Leave until on the point of setting.

Whisk
the egg whites until stiff and fold in with a metal
spoon. Turn into four glasses and chill until set.
Decorate each with a lemon twist and a mint sprig.
