Dessert Recipes - Ginger Souffle Recipe
Ingredients

Butter, for greasing

g/3 oz/1/3 cup caster (superfine) sugar, plus
extra for sprinkling

eggs, separated

g/1/4 cup plain (all-purpose) flour

2.5 ml/1/2 tsp
ground ginger

ml/8 fl oz/1 cup milk

pieces of stem ginger in syrup, finely
chopped

ml/1 tbsp ginger syrup

Whipped cream, to serve
Method:

Grease a 1 liter/4 1/4 cup souffle dish
and sprinkle with caster sugar. Shake out any
excess.

Put half the sugar in a bowl with the egg
yolks, flour and ground ginger and whisk together
well. Bring the milk just to the boil and pour into
the egg mixture, whisking until smooth.

Return to
the saucepan. Slowly bring to the boil and cook for
2 minutes. stirring all the time. until thick and
smooth. Cool slightly, then stir in the chopped
ginger and ginger syrup.

Whisk the egg whites until
stiff. Whisk in half the remaining sugar and whisk
again until stiff and glossy. Fold in the remaining
sugar.

Beat 30 ml/2 tbsp of the egg mixture into the ginger
mixture to slacken it slightly, then fold in the
remainder with a metal spoon.

Turn into
the prepared dish and bake in a preheated oven at
220°C/425°F/gas mark 7 for about 12 minutes
until risen, golden and just set.

Sprinkle with a
little caster sugar and serve straight away with
whipped cream.
