Dessert Recipes - Hot Boozy Orange Soufflé Recipe
Ingredients

Butter, for greasing

50 g/2 oz/1/4 cup caster (superfine) sugar,
plus extra for sprinkling

4 eggs, separated
-
Finely grated rind and juice of
-
2 oranges
-
25 g/1/4 cup plain (all-purpose) flour
-
200 ml/7 fl oz/scant
1 cup milk
-
60 ml/4 tbsp Cointreau or brandy
-
Sifted icing
(confectioners') sugar, for
dusting

Pouring cream, to serve
Method:

Grease
a 1.2 liter/2 pt/5 cup soufflé
dish with butter and sprinkle with caster sugar.
Shake out any excess.

Whisk together the sugar and
egg yolks with the orange rind until thick and pale.
Whisk together the flour and orange juice and stir
into the egg yolk mixture.

Bring the milk just to
the boil. Pour the milk over, whisking all the time.
Return to the saucepan and cook gently, stirring,
until thick and smooth.

Cool slightly, then whisk in
the Cointreau or brandy. Whisk the egg whites until
stiff.

Beat 30 ml/2 tbsp into the orange mixture to
slacken it slightly, then fold in the remainder with
a metal spoon.

Turn into the prepared dish and
bake in a preheated oven at 220°C/425°F/gas
mark 7 for about 15 minutes until puffy, golden and
just set.

Dust quickly with icing sugar and serve
straight away with pouring cream.
