Dessert Recipes - Hot Chocolate Souffle Recipe

Ingredients

  • 4 eggs, separated

  • 40 g/3 tbsp caster (superfine) sugar

  • 30 ml/2 tbsp plain (all-purpose) flour

  • 15 ml/1 tbsp cocoa (unsweetened chocolate) powder

  • 200 ml/7 fl oz/scant 1 cup milk

  • A few drops of vanilla essence (extract)

  • Icing (confectioners') sugar, for dusting

  • Whipped cream, to serve


Method:

  1. Put the egg yolks in a bowl with the caster sugar and whisk until thick and pale.

  2. Blend the flour and cocoa with a little of the milk in a saucepan. Stir in the remaining milk and the vanilla.

  3. Bring to the boil and cook for 2 minutes, stirring all the time, until thickened and smooth. Allow to cool slightly, then whisk into the egg yolk mixture.

  4. Whisk the egg whites until stiff and fold into the mixture with a metal spoon. Turn into four greased individual soufflé dishes.

  5. Bake in a preheated oven at 180°C/350°F/gas mark 4 for about 25 minutes until risen and just set.

  6. Remove from the oven, dust quickly with a little sifted icing sugar and serve straight away with whipped cream.
