Dessert Recipes - Hot Pear and Orange Souffle Recipe
Ingredients

large orange

pear, diced

20 g/1 1/2 tbsp
butter,
plus extra for greasing

20 g/3 tbsp plain (all-purpose) flour

150 ml/2/3 cup milk

25 g/1 oz/2
tbsp caster
(superfine) sugar

eggs, separated

Icing
(confectioners') sugar, for dusting

Orange Sauce, to serve
Method:

Finely grate the rind from the orange. Cut off all
the white pith and slice, then roughly chop the
flesh.

Mix with the pear and spoon into four
buttered individual souffle dishes. Melt the butter
in a saucepan. Remove from the heat and blend in the
flour and milk.

Return to the heat and bring to the
boil, stirring, until very thick and bubbling.

Remove from the heat and beat in the sugar, egg
yolks and the orange rind. Whisk the egg whites
until stiff.

Beat 15 ml/1 tbsp into the mixture to
slacken, then fold in the remainder with a metal
spoon. Spoon on top of the fruit.

Place the dishes
on a baking (cookie) sheet and bake in a preheated
oven at 200°C/400°F/gas mark 6 for about 15
minutes or until risen and golden.

Dust with sifted
icing sugar and serve straight away with hot Orange
Sauce.
