Ingredients

g/4 oz/2/3 cup icing (confectioners') sugar

100
g/4 oz/1/2 cup unsalted (sweet) butter, softened

300 ml/1 1/4
cups double (heavy) cream, lightly whipped

g/8 oz/2 cups ground hazelnuts
(filberts)

ml/1 tbsp Irish whiskey
-
A few
drops of rose water
-
2 egg
whites
-
Rose
petals and a few rose or angelica
leaves, to decorate

Palmiers,
to serve
Method:
-
Beat together the sugar and butter until light and
fluffy. Gently fold in the cream, then the nuts,
whiskey and rose water.

Whisk the egg whites until
stiff and fold into the mixture with a metal spoon.

When thoroughly blended turn into a shallow dish and
chill until firm.
-
Break into rough pieces with a
fork and pile into open champagne cups or shallow
sundae dishes.
-
Scatter with a few rose petals and
stud with leaves. Serve with Palmiers.
