Dessert Recipes - Mango Mousse Recipe

Ingredients

  • 2 limes

  • 1 large ripe mango

  • 150 ml/2/3 cup water

  • 15 ml/1 tbsp powdered gelatin

  • 30 ml/2 tbsp clear honey

  • 300 ml/1 1/4 cups whipping cream, plus extra to decorate


Method:

  1. Finely grate the rind and squeeze the juice from one of the limes. Thinly slice the other lime and reserve for decoration.

  2. Peel the mango, cut all the flesh off the stone (pit) and place in a saucepan. Add the water and lime rind and juice.

  3. Bring to the boil, reduce the heat and simmer gently for about 5 minutes or until tender. Sprinkle the gelatin over and stir until completely dissolved.

  4. Puree in a blender or food processor, then stir in the honey. Leave until cold and the consistency of egg white.

  5. Whip the cream until peaking and fold into the mixture with a metal spoon. Spoon into a serving dish and chill until set.

  6. Decorate with a little whipped cream and lime twists before serving.
