Dessert Recipes - North Angel Mousse Recipe
Ingredients

10 ml/2 tsp powdered gelatin

15 ml/1 tbsp water
-
2 eggs, separated
-
100 g/4 oz/2/3 cup icing
(confectioners') sugar

15 ml/1 tbsp brandy
-
15 ml/1 tbsp dark rum
-
250 ml/1 cup
double (heavy) cream

Shortbread Triangles, to serve
Method:

Sprinkle
the gelatin over the water in a small bowl and
leave to soften for 5 minutes.

Stand the bowl in a
pan of hot water and stir until the gelatin has
dissolved completely (or heat briefly in the
microwave).

Whisk together the egg yolks and icing
sugar until thick and pale. Whisk in the brandy and
rum. Whisk the egg whites until stiff, then whip the
cream until peaking.

Fold the cream, then the egg
whites into the brandy and rum mixture. Divide
between six wine goblets and chill until set. Serve
with Shortbread Triangles.
