Dessert Recipes - Norwegian Cream Recipe

Ingredients

  • 6 eggs, separated

  • 100 g/4 oz/1/2 cup caster (superfine) sugar

  • 15 ml/1 tbsp powdered gelatin

  • 20 ml/4 tsp orange juice

  • Jam (conserve)

  • Whipped cream Grated chocolate or crumbled chocolate flake bar, to decorate


Method:

  1. Whisk the egg whites until stiff. Add the sugar and whisk again until peaking.

  2. Whisk the yolks in a separate bowl and fold into the meringue mixture.

  3. Dissolve the gelatin in the orange juice in a bowl over a pan of hot water or in the microwave. Fold into the egg mixture.

  4. Turn into a soufflé dish and chill until set. When set, spread the top with jam, then whipped cream, and cover with grated chocolate or crumbled flake bar.
