Ingredients

Finely grated rind and juice of 1
large
orange
-
600
ml/2 1/2 cups double (heavy) cream
-
150 ml/2/3 cup sweet white wine
-
5 ml/1 tsp lemon juice
-
Icing
(confectioners') sugar, sifted

3 egg
whites
-
Crystallized (candied) orange slices, to
decorate
Method:
-
Whisk together the orange rind and cream until
stiff. Whisk in the wine and orange and lemon juices
and sweeten to taste with icing sugar.

Whisk the egg
whites until stiff and fold in with a metal spoon.
Turn into a glass serving dish and chill.

Whisk
again to blend before serving and decorate with
crystallized (candied) orange slices.
