Dessert Recipes - Peach Mousse Recipe

Ingredients

  • 10 ml/2 tsp powdered gelatin

  • 30 ml/2 tbsp water

  • 3 large ripe peaches, skinned, stoned (pitted) and chopped

  • 50 g/2 oz/1/4 cup caster (superfine) sugar

  • 15 ml/1 tbsp lemon juice

  • 15 ml/1 tbsp peach or orange liqueur

  • 300 ml/1 1/2 cups double (heavy) cream

  • A few drops of orange food coloring (optional)

  • Angelica leaves, to decorate


Method:

  1. Sprinkle the gelatin over the water in a small bowl and leave to soften for 5 minutes.

  2. Stand the bowl in a pan of hot water and stir until the gelatin has dissolved completely (or dissolve in the microwave).

  3. Puree the peaches with the sugar, lemon juice and liqueur in a blender or food processor. Blend in the dissolved gelatin.

  4. Whip the cream until peaking. Lightly fold into the peach mixture with a metal spoon, adding a few drops of orange food coloring, if liked.

  5. Turn into a glass dish and chill until set. Decorate with angelica leaves before serving.
