Ingredients

ml/4fl oz/1/2 cup rum

Finely grated rind and juice of 1
orange

Finely grated rind and juice of 1 lemon

A
good pinch of freshly grated nutmeg

75 g/3 oz/1/3 cup
caster (superfine) sugar

450 ml/2 cups double
(heavy) cream
Method:

Mix
together the rum, fruit rind and
juice, nutmeg and sugar and stir until the sugar has
dissolved.

Whip the cream until peaking. Gradually
whisk in the liquid. Spoon into six glasses and
chill for at least 2 hours.
