Dessert Recipes - Sparkling Sabayon Recipe

Ingredients

  • 4 egg yolks

  • 45 ml/3 tbsp caster (superfine) sugar

  • Juice of 1/2 lemon

  • 300 ml1 1/4 cups sweet sparkling wine at room temperature

  • 30 ml/2 tbsp brandy

  • 4-6 ratafias


Method:

  1. Whisk the egg yolks, sugar, lemon  juice and half the wine in a bowl over a pan of hot water until frothy.

  2. Gradually whisk in the remaining wine, whisking all the time, and continue to whisk until really thick and the mixture has doubled in volume. Whisk in the brandy.

  3. Place a ratafia in the base of each of four to six wine goblets. Spoon the sabayon over and serve hot.
